Since 1964, Maison Mons has been carrying on a cheese-ripening tradition passed down through generations in Saint-Haon-le-Châtel. Now run by the third generation, this family-owned house sources the finest raw-milk cheeses from partner producers, then patiently matures them in its cellars until they reach perfect ripeness.
